The added feature to be able to view A/P Invoices from the 3-5 Jobs window and a very useful tool. However it would be really nice if it not only showed the vendor but also was sortable and had an option to save current grid view.

Yes, would love to see the Vendor in this window
Vendors have been added and all grids are sortable in version 22. Update to the latest version and you will have these features. The only part missing from your request is the ability to "save" the current view, so you have to sort every time you open the window (not a huge deal in my opinion).
