This would be helpful for required field during data entry so the field is not skipped. This would be a great feature globally for all data entry screens. Ex: We require Customer Purchase Order numbers in the Sales Order Entry field. If the description were to stand out the data entry person could scan the screen before accepting to make sure all the required fields are completed.

I believe you can do this and much more if you have the Customizer module. We change text color often to mark UDF fields, to highlight important fields and to add reminder text to various screens.
You can't change the text on all fields. Check boxes for one, dialog boxes are another.
