Since converting to Sage 2021 it looks like there are 10 digits required for the check number. Ours are 5 digit so there are 5 zeros added to the front. Any way to change it to have just 5?

I agree, I don't understand why there was a need to pad with zeros. It's a number field. 0000001234 has the same meaning as 1234 in the number world and check numbers are just that, numbers. Seeing 0000XXXXX in bank rec, makes it more difficult to find a check number than just XXXXX
In the 2027 Release, the Check Number will expand to 30 characters, with an option to define the maximum length of the check number, and an option to either display or suppress leading zeros on screens, reports and forms. The 2027 Release will be available in April 2027.
