Lot / Serial Number which would be a lot better and used if when you print a "Picking Sheet" it would show the Lot/Serial number to pick so the warehouse would pick the correct item. Just in case it may be out of order in stock. I don't want the warehouse to pick a number, We need the correct one picked such as the oldest etc.

Assuming that you do lot distribution in sales order entry, on the picking sheet selection screen, there is a "Print Lot/Serial Distributions" check box. Select it to print the lot numbers selected in sales order entry.
Are you referring to the picking sheet in production management?
