When you enter an Inventory Transaction Entry, "Issue" type entry, you have the ability to override the default GL account. However, there is no easy way to identify which item transactions were posted to a specific GL account because the GL account is not retained in the item transaction history and the GL history doesn't include the item transaction details. I have had several requests for a custom report showing detail of which item issue transactions were posted to a specific GL account. Inventory Transaction Detail History should retain the GL account that was used to post each inventory transaction.
