Sometimes, after shipping some items on an order, it is decided to replace an item with another one, eg because the original is not available, or just because it is decided a different item will be suitable. Sometimes it is because at the time of order entry, only a generic item can be identified, but then when an item is shipped we need to change to a specific item. Currently, Order Entry allows us to delete items only until one item has been shipped. After that, it allows us to add items, but not delete them.

Just go into order entry
Zero out the quantity still on order
Dounle click on the Completeed column "No" to change it to YES and post
It shows nothing to ship but still shows history of what was ordered
