We should be able to track any changes to customer or vendor records including pricing tables.

Orchid's Extender product will allow this.
Already solved - Audit Logger (Pacific Technology). We use it for a good number of clients, whenever change audit trail is required.
Audit Logger is SDK, logs all changes in all master fields/ setup in all core modules ,without any code needing to be developed, and can be configured in 5 minutes.
Orchid Extender is better for custom needs - it requires Python script, so takes a fair bit of time & technical skill to set up, or you get it written for you.

Extender doesn't require Python script to record changes made to fields and records. You select the view, select the fields from a list on the screen that you want to track, done.
Feature requested May 2019 Sage - please put an AUTOMATIC "Date Entered" field on all posts.
Have looked further at Orchid Extender, agree that it is a simple audit log tool as well. Plus all that scripting anywhere goodness.
