is it possible to allow the Administrator to hide or restricting certain columns on the grid view i.e discount colums in OE entry screens

You can right click and hide columns in any of the grid views in Sage, and I think any user can do that. The administrator can hide or remove certain fields using the UI Profile Maintenance/Assign UI Profiles in the Administrative Services menus. This includes delete buttons in AR & AP, ship all buttons in OE, etc...
